Option 2 (non-vegan): Saffron rice and prawns 🥩

Saffron rice with prawns cooked in sauce of extra virgin olive oil, garlic, cilantro and paprika.

TUESDAY

Main dish:

Option 1: La’ades 🥦

A vegan soup made with brown lentils added to a stir fried base of onions tomatoes, garlic, herbs and spices.

Option 2: La’ades with beef  🥩

A soup made with brown lentils added to a stir fried base of beef bones, onions tomatoes, garlic, herbs and spices.

WEDNESDAY

Main dish:

Option 1: Gamila 🥦

A slow-cooked stew of daily picked vegetables

Option 2: Moroccan Chicken with Preserved Lemon 🥩

Slow cooked chicken marinated with preserved lemon, saffron and other spices in onion tomato and olive oil sauce. Topped with preserved lemons and olives.

Salads:

parsley x couscous x tomatoes x onions

THURSDAY

Main dish:

Option 1: Tumeric rice, spinach, and cashews 🥦

Steamed rice in turmeric water, toped with stir-fried spinach and cashews.

Option 2: Mrouzia (lamb with prunes) 🥩

A slow-cooked lamb cut in onions sauce topped with prunes and eggs.

Salads:

roasted pumpkin x basil x onions x roasted capsicum

FRIDAY

Main dish:

Option 1: Couscous 7 vegies 🥦

A stew cooked with seven vegetables – cabbage, onions, tomatoes, turnips, carrots, chickpeas, pumpkin and small zucchini served with handmade couscous.

Option 2: Chicken Couscous 🥩

A chicken stew cooked with seven vegetables – cabbage, onions, tomatoes, turnips, carrots, chickpeas, pumpkin and small zucchini served with handmade couscous.
